This Crispy Fried Pompano was so freaking delicious. Pompano is one of my favorite fishes, and there are so many ways to enjoy it. I’ve had it baked, made it into a Caribbean-style curry, Baked, and now we’re frying it. The pompano was buttery, flaky, and tender on the inside, while the outside got perfectly crispy with that nice crunch. I wanted something different for Fish Fry Friday, and this was perfect. It’s simple, doesn’t take long, and still full of flavor!
Crispy Fried Pompano Ingredients
- Pompano: Make sure its gutted and cleaned!
- Seasonings: Paprika, Turmeric, Ginger Powder, Slap Ya Mama, Garlic Powder & Pepper
- Tempura Batter & Louisiana Fish Fry: Creates a crispy, flavorful coating.
- Oil: For frying.

How to Make Crispy Fried Pompano
Start by prepping the fish. Make diagonal cuts across the pompano, then go the opposite direction to create a checkered pattern on both sides. Make sure the fish is cleaned and gutted, then pat it completely dry so the seasoning sticks properly.

Drizzle a little oil over the fish, then season it with paprika, turmeric, ginger powder, Slap Ya Mama, garlic powder, and pepper. Use most of the seasoning on the fish, making sure to get into the cuts and inside the cavity. Take the remaining seasoning and add it to your coating. In a bowl, mix together the tempura batter, Louisiana Fish Fry, and the leftover seasoning until well combined.


Next, coat the fish in the dry batter. Heat oil in a pan until hot, then carefully place the fish into the oil. Fry until it’s golden and crispy, flipping every few minutes so it cooks evenly on both sides. Once done, remove from the oil and let it rest.
