I actually made this cobbler using the leftover filling from my Homemade Strawberry Turnoversand Homemade Cherry Turnovers, along with the extra pieces of homemade puff pastry that I had left after cutting my turnovers. I tossed both fruit fillings into a small cast iron skillet, topped it with the remaining puff pastry, and baked it until the pastry was golden brown and flaky.
Homemade puff pastry: I used the leftover pieces of puff pastry from making my turnovers. The small pieces work perfectly as a rustic cobbler topping.
Vanilla ice cream: A scoop of vanilla ice cream is the perfect finishing touch for this warm, fruity dessert.
How to Make Mixed Berry Cobbler
Start by preheating your oven to 375°F.
Add your leftover strawberry and cherry filling to a small cast iron skillet. Spread the filling into an even layer so the fruit is distributed throughout the skillet.
Next, take your leftover pieces of homemade puff pastry and arrange them over the top of the fruit filling. You don't have to make it perfect. I actually love the rustic look of using the leftover pastry pieces.
Place the skillet in the oven and bake until the puff pastry is golden brown, flaky, and cooked through. Since the amount of filling and pastry can vary, keep an eye on it while it bakes. You want the fruit to be hot and bubbly and the pastry to have a beautiful golden-brown color.
Once it's ready, carefully remove the skillet from the oven and let the cobbler cool for a few minutes.
Serve it warm with a scoop of vanilla ice cream on top, and enjoy!
