Instructions

  1. Place all dressing ingredients into a blender and process until smooth and pourable. Store in the refrigerator until ready to use.

  2. If using black beans, add them to a pot with the cumin, chili powder, cayenne, salt, and pepper. Heat through over medium-low heat, then set aside to cool.

  3. Season your ribeye generously with garlic powder, red pepper flakes, black pepper, Montreal seasoning, and salt. Grill until medium-rare to medium. Remove and let rest for 5 minutes before slicing into bite-sized pieces. I used my indoor grill for this recipe!

  4. Combine the chopped avocado, jalapeños, tomato, red onion, grilled corn, and optional black beans in a large bowl.

  5. Add the sliced steak to the bowl, pour the creamy avocado dressing over the top, and toss until everything is fully coated. Garnish with crumbled queso fresco if desired and serve!
