This pizza reminds me of the super cheesy and mouthwatering pizza that Shaggy and Scooby would go crazy for in Scooby Doo. It packed with Sam’s Club juicy rotisserie chicken, ham chunks, onions, and lots and lots of cheese. It pairs so well with the cheesy and herby Italian dough we’ll be making. How to Make The Italian Herb and Cheese Dough

In a stand mixer bowl, combine warm water, sugar, and yeast. Let sit until foamy. Then add olive oil and salt. Slowly add in all purpose flour, being sure to mix on low speed until the dough comes together. Mix in Italian seasoning, Tony’s Garlic & Herb, and Colby & Monterey Jack cheese. Knead on medium speed for 7–8 minutes (or 10 by hand) until smooth and elastic. Lightly oil a large bowl, place dough inside, cover, and let rise 1–1½ hours, until doubled in size.

Punch down the dough and divide into 4 equal portions. Form each into a 10-12-inch circle. Cover the dough balls with a towel and let them rest for 15 minutes. This makes them easier to stretch and shape when baking. Use a rolling pin or your hands to flatten the dough and shape into a circle. I recommend placing the flatten dough on parchment-lined pans and pre-baking them at 425°F for 7–8 minutes until lightly set. This step will keep your pizza from turning out droopy when we add on the sauce and toppings later!

How to Store Italian Herb and Cheese Pizza Dough

If you don’t plan to bake all 4 pizzas:

1. Refrigerate: Coat extra dough balls lightly in oil, wrap tightly in plastic wrap (if you have it), and refrigerate for up to 3 days. Bring to room temperature before using.

2. Freeze: Wrap tightly in plastic wrap, then place in a freezer bag. Freeze for up to 3 months. Thaw in the fridge overnight, then let rest at room temp for 1 hour before rolling.

How to Make Creamy White Sauce

This creamy white sauce is much like the white sauce you’ll see on alfredo pizza. In a saucepan, melt some butter over medium heat. Whisk in flour and cook 1–2 minutes until lightly golden. Slowly whisk in milk, stirring until smooth. Add in cream cheese and shredded mozzarella. Stir until melted. Season with salt and pepper to taste, then set aside.

Assembling the Creamy Chicken White Sauce Pizza

1. Spread a thin layer of white sauce over each prebaked crust.

2. Add a layer of shredded mozzarella, followed by caramelized onions, chicken, and ham.

3. Spoon another light layer of white sauce over the toppings.

4. Finish with another layer of mozzarella.

5. Bake at 425°F for 12–15 minutes, or until cheese is bubbling and crust is golden.

6. Let cool for 5–10 minutes before slicing.
