Why You Will Love This Creamy Rotisserie Chicken Pasta

Everybody loves a simple dinner, and this Creamy Rotisserie Chicken Pasta will not only hit the spot, but it’ll have everyone asking for seconds. I used premade ingredients for this recipe to make dinner time so much simpler. Everything comes together really quickly, and your family will completely love it. I made this for dinner the other night, and my husband and brother wouldn’t stop ranting about it! It is packed with juicy shredded chicken, a creamy seasoned pasta sauce, and loaded with bubbly mozzarella cheese.

Best of all, this is actually part of a special series I’m doing where I share three easy, simple dinners you can make for your family using just one rotisserie chicken. Like literally, one chicken can make three entirely different meals! Once you’ve fallen in love with this bake, be sure to head over to my 3 Dinners, 1 Rotisserie Chicken blog post to check out the other incredible ways to stretch your dinner budget.

Ingredients

  • Sam’s Club Rotisserie Chicken: One pound of juicy, shredded chicken. Using a pre-cooked Sam’s Club Rotisserie Chicken is my absolute favorite shortcut because it’s already perfectly tender and packed with flavor.
  • Rigatoni noodles: One pound of rigatoni. Perfect for holding onto that rich, delicious sauce.
  • Pasta sauce & Heavy cream: Two pounds of your favorite jarred pasta sauce combined with a cup of heavy cream to create a luxurious, restaurant-style pink cream sauce.
  • Aromatics: A blend of olive oil, a knob of butter, fresh minced garlic cloves, and chopped onion to build a deep flavor baseline.
  • Seasonings: A heavy-hitting blend of garlic powder, onion powder, red pepper flakes, black pepper, salt, and Italian seasoning to elevate the jarred sauce.
  • Mozzarella cheese: Two cups of shredded mozzarella to create that ultimate golden, stretchy cheese crust on top.
  • Parsley: Freshly chopped for a beautiful pop of color right at the end.

How to Make Creamy Rotisserie Chicken Pasta

Preheat your oven to 450°F. Cook your rotini pasta in a large pot of salted boiling water according to the package instructions. Drain the noodles and let them cool slightly.

In a large pot, drizzle your olive oil and add a knob of butter over medium heat. Once the butter is melted and bubbling, toss in your chopped onion and minced garlic. Sauté them together for a few minutes until they are soft and smelling amazing.

Pour your two pounds of jarred pasta sauce directly into the pot with the aromatics, then stir in the heavy whipping cream. Dump in all of your seasonings (garlic powder, onion powder, red pepper flakes, black pepper, salt, and Italian seasoning) and stir well until the sauce is completely smooth and uniform.

Gently toss your cooked rigatoni pasta and the shredded rotisserie chicken directly into the creamy sauce pot. Mix everything together thoroughly so that every single noodle and piece of chicken is completely coated.

Transfer the pasta mixture into a large baking dish. Top it off evenly with your two cups of shredded mozzarella cheese. Pop it into the preheated oven and bake for 10 to 15 minutes, or until the cheese is completely melted, bubbly, and slightly golden brown. Garnish with fresh chopped parsley and serve it up hot!

Tip for the Best Creamy Rotisserie Chicken Pasta

  • Cook your rotini just until it is al dente (firm to the bite). Because the pasta will continue to cook and absorb moisture while it bakes in the oven at a high heat, starting with slightly firm noodles prevents them from turning mushy.

Variations & Substitutions

  • If you don’t have rigatoni on hand, penne, rotini, or spaghetti noodles make excellent substitutes.
  • Fold in a few handfuls of fresh baby spinach or fresh basil when you add the chicken for an extra nutritional boost.

How to Store

Store your leftover Creamy Rotisserie Chicken Pasta in an airtight container in the refrigerator for up to 3 to 4 days. Because the sauce contains heavy cream, it will naturally thicken up as it sits in the cold. When reheating, add a tiny splash of water to the dish before microwaving or heating on the stovetop to bring that smooth, creamy texture right back to life.
