Why You Will Love This Honey Roasted Carrots Recipe

If you’re looking for a Thanksgiving side dish that might just steal the show, you have to try these Honey Roasted Carrots! This is one of my most popular carrot recipes on TikTok, and the feedback I’ve gotten from y’all has been SO good. People have made these carrots for their families, served them at dinner, and come back to tell me how much everyone loved them.

These carrots are sweet, buttery, and packed with flavor thanks to a combination of honey, brown sugar, cinnamon, smoked paprika, and my favorite salt-free garlic and herb seasoning. With Thanksgiving right around the corner, these Honey Roasted Carrots deserve a spot on your holiday menu. They’re easy to prepare, use simple ingredients, and make a beautiful side dish for Sunday dinner or your Thanksgiving spread.

My Favorite Pumpkin-Shaped Baking Dish for Holiday Hosting

Can we talk about how cute this pumpkin-shaped baking dish is?! I love using fun cookware during the fall, especially when I’m cooking for family and friends. It makes even a simple side dish like roasted carrots feel a little more special on the table.

Ingredients

  • Carrots: The star of the recipe! Their natural sweetness pairs beautifully with the honey, brown sugar, and warm spices.
  • Butter: Adds richness and helps the sweet, savory seasoning coat the carrots.
  • Honey: Brings sweetness and helps create a delicious glaze. I also like to drizzle a little extra over the carrots after baking.
  • Brown sugar: Adds a deeper, almost caramel-like sweetness that gives these carrots their candied-yam feel.
  • Smoked paprika: Adds a subtle smoky flavor that balances the sweetness.
  • Black pepper: Brings a little bite to balance the honey and brown sugar.
  • Salt-free garlic and herb seasoning: Adds savory, herby flavor without overpowering the carrots.
  • Vanilla extract: Adds a subtle sweetness that works beautifully with the honey and brown sugar.
  • Salt: Helps balance the sweet flavors and bring everything together.
  • Cinnamon: Adds warm, cozy flavor that makes these carrots perfect for fall and the holidays.
  • Nutmeg: A tiny dash adds another layer of warmth.

How to Make Honey Roasted Carrots

Preheat your oven to 400°F. Start by rinsing your carrots, then cut them into evenly sized pieces so they cook as evenly as possible. You can peel them first if you prefer, but make sure they’re clean before seasoning.

In a small bowl, whisk together the melted butter, honey, brown sugar, vanilla extract, smoked paprika, black pepper, garlic and herb seasoning, salt, cinnamon, and a dash of nutmeg. Give everything a good mix until the brown sugar is incorporated and the seasonings are evenly distributed.

Place the carrots in your baking dish and pour the mixture over them. Toss everything together until the carrots are well coated.

Bake for 25 to 30 minutes, or until the carrots are tender. The exact time will depend on the thickness of your carrots, so check them with a fork before taking them out of the oven.

Once they’re done, drizzle a little extra honey over the top and toss the glaze over the carrots. Serve warm and get ready for everybody to ask you how you made them!

Variations & Substitutions

  • Make them with hot honey: One of my followers tried hot honey in this recipe and loved it! It’s a great option if you want a sweet and slightly spicy version.
  • Make them in the air fryer: These carrots can also be made in an air fryer. Arrange them in a single layer and cook until tender, shaking the basket occasionally. Cooking time will depend on the size of your carrot pieces and your air fryer, so start checking early.
