Why You’ll Love This Garlic Butter Bok Choy with Carrots
I didn’t grow up eating bok choy, but after meeting my husband, I started eating it all the time. Now, it’s one of my favorite vegetables to make as a quick side dish.
This Garlic Butter Bok Choy with Carrots is packed with fresh vegetables, garlic, and a savory sauce made with Knorr Liquid Seasoning. It takes less than 30 minutes to make and requires very little effort, which makes it perfect for busy weeknight dinners.
I love serving this with adobo, sticky pork ribs, chicken, or pretty much any meal that needs a flavorful vegetable side.
Ingredients
- Bok Choy: Six bundles of fresh bok choy are the star of this side dish. Make sure to separate and wash the leaves well to remove any dirt or grit.
- Carrot: One shredded carrot adds a little natural sweetness, color, and texture.
- Garlic: About 2 tablespoons of freshly minced garlic adds tons of flavor and pairs perfectly with the butter and sesame oil.
- Butter & Oils: Butter, olive oil, and sesame oil create a flavorful base. The sesame oil is added at the end for a nutty finish.
- Seasonings: Pink Himalayan salt, black pepper, and Knorr Liquid Seasoning season the bok choy without overpowering its natural flavor.

How to Make Garlic Butter Bok Choy with Carrots
Start by separating the bok choy and washing each piece thoroughly. Bok choy can hold quite a bit of dirt and grit between the leaves, so give it a good rinse and gently scrub the leaves with your fingers. You don’t want to bite into a crunchy piece of dirt!
Next, heat the olive oil and butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant and lightly browned.


Add the bok choy and shredded carrot to the skillet. Toss everything together so the vegetables are coated in the garlic butter.

Cook the bok choy until it reaches your preferred texture. My husband and I like ours mostly tender with a little crunch left in the leaves. I like to think of the texture as similar to kimchi: tender, but not completely soft.

Once the bok choy reaches your desired texture, season it with pink Himalayan salt, black pepper, and Knorr Liquid Seasoning. Toss everything together until the seasoning is evenly distributed. Finish with the sesame oil and give everything one final toss.

Tips for the Best Garlic Butter Bok Choy with Carrots
- Wash your bok choy well. Dirt and grit can hide between the leaves, so don’t skip this step. Separate the bundles and rinse each piece thoroughly.
- Use pink Himalayan salt: I prefer pink Himalayan salt here because it has a more subtle flavor than iodized table salt. Since most of the seasoned flavor comes from the Knorr Liquid Seasoning, I don’t want the salt to overpower it.
Variations & Substitutions
- Make it spicy: Add a pinch of red pepper flakes or sliced fresh chili peppers for some heat.
- Add onions: My husband and I LOVE onions in pretty much anything we can get away with! Adding sliced onions to this dish gives them a chance to soften and caramelize, adding a savory, slightly sweet flavor that makes the whole dish even better.

This bok choy is such an easy side dish because it pairs well with so many different meals. I especially love serving it with dishes that have bold, savory flavors.
- Adobo: The savory flavors of adobo pair so well with the garlicky bok choy.
- Sticky Pork Ribs: The slightly sweet, sticky ribs and the savory vegetables make such a good combination.
- Chicken: Serve it alongside grilled, baked, or pan-fried chicken for an easy weeknight dinner.
- Rice: Add a scoop of white rice and you’ve got a simple, filling meal.
