Why You Will Love This Green Mango and Tomato Salad
My husband loves all things mango, and he especially loves tomatoes, so this recipe is one of my go-tos when I want a light, fresh, and reliable side dish to complement a savory meal. In fact, this was one of the special dishes I made for his birthday spread! I pulled out all the specials for him: oyster sisig, garlic fried rice, my favorite Deep Fried Deviled Eggs, crispy lumpia, this bright salad, and a refreshing Calamansi Mint Spritzer to wash it all down. Having this juicy, fruity, and refreshing touch was so nice to balance out such a rich and heavy meal!
This salad is inspired by a classic Filipino green mango salad (Ensaladang Mangga). In Filipino cuisine, tart green mangos are paired with juicy tomatoes, onions, and fresh herbs to create a delicious side that cuts right through rich meats and fried foods. It is vibrant, wholesome, and brings that authentic Southeast Asian flavor right to your dinner table!
Ingredients
- Green mangos:Â Two ripe green mangos, peeled, cored, and chopped into bite-sized cubes.
- Tomato:Â One large fresh tomato, chopped.
- Red onion:Â 1/2 small red onion, finely chopped for a sharp, colorful crunch.
- Lemon (or lime) juice:Â Freshly squeezed juice of one lemon or lime for bright, citrusy acidity.
- Seasoning:Â Salt and freshly cracked black pepper to taste.
- Cilantro:Â Chopped fresh cilantro for a burst of vibrant, fresh flavor.

How to Make Green Mango and Tomato Salad
Start by preparing your green mangos. Peel off the green skin using a vegetable peeler, slice the fruit away from the central pit, and chop it into small, bite-sized cubes.
In a large salad or mixing bowl, combine the chopped green mangos, diced tomato, chopped red onion, and fresh cilantro.

Squeeze the fresh juice of one lemon (or lime) directly over the top of the fruit and vegetables.

Season with a generous pinch of salt and black pepper to taste. Toss everything gently with a spoon until the citrus juice coats all the ingredients evenly. Serve immediately!

- Filipino Style (Bagoong Twist): To make it even closer to traditional Filipino Ensaladang Mangga, serve a spoon of bagoong alamang (Filipino sautéed shrimp paste) on the side or toss in a dash of fish sauce for deep savory umami!
- Citrus Options:Â Fresh lime juice brings a tropical tang, but fresh lemon juice works just as wonderfully if that’s what you have on hand.
